A white sparkling brut nature from Filipa Pato in Bairrada, Portugal. A very old region known for the production of high quality Cercial, Bical, and Maria Gomes which is dominated by the Caramulo mountain. A very mineral nose with a certain smokiness from the limestone soil. It has a distinguished touch of pears (typical Bical) and fennel. After some time in the glass it even reveals thyme and honey. The mouth is refined, creamy, relatively smooth and has present minerality. The middle pallet is fruit driven and the aftertaste is dry and refreshing.
